Cook shiitake mushrooms on medium-low heat in a pan with oil until golden and fragrant.

Add in onions, garlic, carrots and spinach. Stir fry until soft and excess liquids have been evaporated. Don't want the filling to be watery!

Combine cooked vegetables into a large bowl with fresh tofu, soy sauce, sesame oil, salt and pepper. Mix well.
