First, finely chop ginger, garlic and garlic chives. Tip: grate the ginger - much easier!
Combine dumpling filling ingredients. Mix well until a thick paste is formed.
Tip: mix with your hand, its much faster & easier.

This recipe makes ~30 plump dumplings.
Bring the water up to a hard boil then add in dumplings. Cook in 2 batches to avoid overcrowding the pot.
The dumplings are done once they float to the top. This will take about 3 to 4 minutes.
