Red cabbage salad

Refreshing and crunchy salad. Great accompaniment to a heavy main or simply on it's own (bulk up by adding some rotisserie chicken). Also really good to have at a BBQ!

Ingredients

  • 300 g / 11oz red cabbage about ½ of a cabbage, shredded
  • 1 apple (red or green) cored, cut into thin match sticks (note 1)
  • ½ cup fresh parsley finely sliced
  • ½ cup roasted cashew nuts roughly chopped

Salad dressing

  • ½ tablespoon lemon juice or juice of a small lemon half
  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

  • Combine salad dressing ingredients in a small bowl and mix well. Set aside.
  • In a large salad bowl, add red cabbage, fresh parsley and apple sticks.
  • Pour salad dressing into salad bowl, toss and mix salad thoroughly.
  • Sprinkle cashew nuts over salad.
  • Serve immediately.

Notes

Note 1. Stop apples from turning brown after apples have been cut into matchsticks, soak lightly salted water for about 2 minutes. This will stop the apples from turning brown! No need to rince afterwards. Just go light with the salt. A good pinch of salt to 3 cups of water will do the trick for 1 - 2 apples.
