For velvety, tender beef, marinate with soy sauce, oyster sauce, shaoxing wine, oil, cornstarch, garlic & pepper. Marinate for at least 15 minutes.

Saute brown onions, spring onions and garlic on high heat with oil until lightly golden. Add beef and sear on high heat then remove and set aside.

In the same pan, saute mushrooms until brown and lightly caramelised (flavour!). Then add in snow peas.

Add in Hokkien noodles then season with dark soy sauce, brown sugar and sesame oil. Toss well!

Remember the beef & onion mixture? Add it back in the pan. Season with black pepper generously and toss a bit more.
