Make sure to use ripe & juicy tomatoes!
To start, fry spring onions and ginger with oil in a non-stick frypan.
Add tomato wedges, sugar and lightly season with salt. Cook and soften tomatoes. Remove and discard ginger then whisk eggs with shaoxing wine and salt.
Add more oil into the pan then pour in eggs. Let the eggs set and form shape before stirring each time. Cook for about 2 minutes until eggs are cooked.
