Wash and half the romaine lettuce lengthways then thickly slice. Thinly slice the rest of the vegetables.

Roughly chop roasted almonds or mixed nuts. Other suggestions: cashews, peacan, pine nuts, walnuts, etc.

Thinly slice avocado or cut into cubes if that's easier. If slicing in advance, drizzle a little lemon juice all over to stop it from going brown!

For the lemon dressing, combine olive oil, fresh lemon juice, lemon zest, sugar (or honey), dried oregano, salt & pepper.

To assemble, spread the salad bowl or plate with lettuce first then shredded rotisserie chicken.

Then top with capsicum (bell pepper), red onions, avocado, almonds and then dried cranberries.
