Healthy and quick chicken noodle stir fry that's loaded with lots of veggies! Dinner done in under 25min!

Ingredients

Cabbage, broccoli and carrots are perfect stir-fries. Feel free to swap out or add more of other veg you've got lying around in the fridge.

Saute onion and garlic with 1 tablespoon of oil in a hot, non-stick frying pan on medium/high heat.

Once lightly golden and fragrant, add chicken strips and saute until brown but not cooked through. About 2 minutes. Remove, set aside.

Same pan, add carrots, cabbage and broccoli and saute on high with remaining 1 tablespoon of oil for 1 minute.

Pour ¼ cup of water into the pan and place lid on. Cook for 3 minutes or until vegetables are soft. Then, lift the lid and evaporate the liquids.

Add sauteed chicken mixture back into the pan with soy sauces, a little sugar. Stir fry and mix well.

Add Hokkien noodles and toss for a couple of minutes on high heat. Best use two spatulas for even mixing.
