In a large bowl, combine all wonton filling ingredients. Mix well in one direction until sticky and a thick paste is formed.
Now wrap wontons. This recipe makes ~30 wontons.

To make a quick soup; add chicken stock, shaoxing wine, soy sauce, salt and ginger slices. Bring up to boil and simmer.
Bring a large pot of water to boil, season with salt generously and cook the egg noodles according to packet instructions. About 2 to 3 minutes.
Then boil wontons. Cook in 2 batches to avoid overcrowding the pot. Wontons are cooked once they float to the top.
Finally, flash cook bok choy for about 1 minute. Alternatively, steam the Asian greens if you wish to retain more of its nutrients.
Evenly divide noodles, wontons and bok choy into 4 large soup bowls. Pour hot soup with a ladle into each bowl.
